Pineapple Shrimp Fried Rice
Pineapple is a very refreshing fruit. I was sitting on my porch enjoying the sunny day when all of a sudden my daughter walked in the front door with this giant pineapple she bought from the Farmer’s Market. Right away, I thought of scooping the pineapple flesh and making a pineapple fried rice.
Nothing better than a fresh and sweet pineapple smoothie in the middle of the day. When you make this recipe, and you scoop out all that flesh, don’t discard them. They’re the perfect addition to your smoothie. In this recipe, I also added Argentinian shrimps which are naturally pink and give so much flavor to this dish.

- 2 Roma tomatoes, deseed, small diced
- 1/2 teaspoon turmeric, for color
- 1/2 pound raw shrimps, peeled, deveined, sliced

- Heat a wok or wide pan with oil, add the onion, saute for a minute or until tender. Add the garlic and saute for another minute or until aromatic.
- Add the tomatoes and pineapple chunks, stir, cook for a minute or until the pineapple are tender. Add turmeric (for color), continue stirring until well combined.
- Add the shrimps, stir, cook until opaque or until they curled. Add cashews, soy sauce, green onions, stir to combine. Add the rice, continue stirring until well heated. Garnish with cilantro. Serve warm.
Notes
- If you’re using chicken, get 1/2 cup rotisserie chicken and shred them before adding to the rice.
- If you’re using tender cut beef, get 1/2 pound, cut them into thin slices then cook to the desired doneness before adding to the rice.
- You may also use ground pork or ground beef. Use about 1/2 a pound and brown them first before adding to the rice.

Hello my name is Jen.
I’m a mom of 2 wonderful girls. I love to prepare and cook home-cooked meals. Cooking and planning your meals might sound like another chore added to your already long list of things to do. Believe me, I’ve been there. However, cooking more meals at home is worth all the effort. After years of cooking for my family and teaching culinary classes, I can honestly say that I have more control over the quality of the ingredients I use. That means I’m eating a lot healthier. Eating healthy doesn’t have to be boring or don’t have to eat the same thing repeatedly. There are ways we can do to naturally enhance the flavor of our food and enjoy home-cooked meals.
