Pineapple Chicken
Pineapple is great on anything. You’ll love the sweet and tangy flavor of this dish.
Ingredients:
1 lb. chicken breast, thinly sliced
5 stalks green onions, sliced
1 egg white
1/4 cup all purpose flour
1 teaspoon sesame oil
1 tablespoon corn starch or tapioca flour, dissolved in cold water
1 cup vegetable oil, for frying
salt and pepper to taste
For the sauce:
1 cup chicken broth
1 cup pineapple juice
1/4 cup soy sauce
1/2 cup pineapple crushed
2 tablespoons sherry wine vinegar
2 tablespoons light brown sugar
2 tablespoons honey
1 teaspoon chili paste or Harrisa paste
2 cloves of garlic, finely minced
1 teaspoon sesame oil
Combine all sauce ingredients, mix well. Set aside
Instructions:
-1. Place the chicken in a bowl. Add egg white, sesame oil, flour, salt and pepper. Toss, and coat evenly. Marinate for at least 30 minutes.
-2. Prepare the sauce. And slice the green onions, set aside.
-3. Heat a pan with oil. Fry the chicken until golden brown, cook each side for a minute or so. Remove the chicken from the pan, set aside.
-4. Add the sauce into a hot pan, stir to mix well. Simmer for a minute. Add the chicken to the pan with the sauce, stir to combine.
-5. Add the corn starch or tapioca flour, stir until thickened. Add the green onions, stir to combine. Sprinkle toasted sesame seeds and serve with steamed rice.
