Peach Crisp

Get a cup of coffee, sit down, watch Netflix and enjoy a nice big piece of this Peach Crisp dessert. This is actually a pretty healthy dessert. I added almond flour and coconut flour instead of regular white flour. You also have a choice of using butter or coconut oil (or coconut butter). You can enjoy it for breakfast too.

Let’s start cooking!

Ingredients:

6 large peaches, deseed, sliced into then wedges

1/4 cup brown sugar or coconut sugar

1/4 cup maple syrup

1 teaspoon vanilla

2 tablespoons unsalted butter or coconut butter

2 teaspoons cinnamon

1 teaspoon tapioca flour or 2 teaspoons cornstarch

FOR THE CRISP:

1 cup oats or gluten free oats

1/4 cup brown sugar or coconut sugar

2 tablespoons unsalted butter or coconut butter

2 teaspoons cinnamon

1/2 cup almond flour

1/4 cup coconut flour

Instructions:

1. Preheat the oven to 375ºF. In a bowl, add peaches, cinnamon, butter, maple syrup, tapioca flour, and vanilla. Mix until well incorporated. Transfer to a baking dish and set aside.

2. For the crisp, mix all crisp ingredients. Pour over the peach mixture, press gently for even baking. Bake for 20-35 minutes or until the top is golden brown and the peaches are bubbling.
