Naked Cauliflower Tacos with Creamy Avocado

This recipe made my mouth WATER!

You can use corn or flour tortilla wrap, I just used lettuce leaves kinda like the naked taco salad. The best part I like about this recipe is the creamy avocado – you can use it for your slaw or any salad. I used Sriracha sauce but you can use any hot sauce you want for your cauliflower.

Quick and easy lunch for those busy days. You can prep the avocado cream ahead but make sure you use it right away for freshness. Let’s get cookin’

Ingredients
  

  • 1 head cauliflower, cut into florets
  • 1 cup shredded lettuce leaves
  • 6 whole lettuce leaves, add more if needed trim the bottom
  • 4 eggs, beaten
  • 1/4 cup Sriracha
  • 1/2 cup almond meal
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • a handful chopped cilantro, for garnish
  • salt to taste

Instructions
 

  • Preheat the oven to 375 degrees. Line a baking sheet pan with foil or parchment paper. 
  • In a bowl, add eggs and Sriracha, mix to combine well. Add the cauliflower and almond meal, season with salt, stir to mix. 
  • Arrange the cauliflower on the baking sheet and drizzle with oil. Bake for 30-40 minutes or until tender. Cool, lay the lettuce leaves on a plate, fill with tomatoes, cilantro, and cauliflower. Drizzle the avocado cream on top.

  • 2 avocados
  • 1 cup Greek yogurt
  • 1 garlic clove
  • salt and pepper to taste
  • 2 tablespoons water, add more if needed
  • Juice of one lime

Instructions
 

  • In a food processor, combine all ingredients, process until smooth.

    Jen, all of your recipes are so beautiful, easy and quick.
    Just right to get a reluctant cook to get back in the kitchen again. They are also enticing enough to use to teach my middle and high school students to ditch fast food and go for it!

    Would that be feasible to do?

      Yes, with an adult supervision, kids can easily follow these recipes. They are simple and mostly plant-based which allow the kids to learn more about their veggies.
