Lettuce Wrap in 3 Ways
Lettuce wrap in 3 ways is not your ordinary lettuce wrap. I made turkey filling, cauliflower rice, and soba noodles with peanut sauce. There’s something about chopping vegetables that gives me satisfaction to enjoy every bite of every dish I make.
It’s not all about chopping but combining ingredients that goes well together. It’s about bringing our creativity to make delicious foods with the intention to nourish the body as well.
Let’s get cooking
For the vegetables. Sliced them thinly.
1 radish
1 cucumber
1 carrot
1 cup green cabbage
1 Roma tomato, deseed and diced
2 stalks green onion, sliced
1 whole head butter lettuce, use for wraps
Fresh basil and cilantro, for garnish
For the sauce
1/4 cup creamy peanut butter, no sugar added
1/4 cup low sodium soy sauce
2 tablespoons rice vinegar
2 tablespoons honey
1 teaspoon chili paste
1 teaspoon sesame oil
1 garlic clove, grated
1 teaspoon fresh ginger grated
Water to thin out the consistency of the sauce
* Combine all sauce ingredients, stir until smooth.
For the ground turkey
1 lb. ground turkey breast
1 teaspoon 21 seasoning salute
1/2 teaspoon red chili pepper flakes
1 onion, chopped
3 garlic cloves, minced
2 tablespoons olive oil
Salt and pepper to taste
* Heat the pan with oil. Sauté garlic and onion for a minute or until the onion is tender or translucent. Add 21 seasoning salute, salt and pepper, stir to combine. Add the turkey, constantly stirring until fully cooked. Set aside.
For the noodles
* I used 4oz. soba noodles and cooked it according to the package instructions. Then I drizzle a little sesame oil. Set aside.
For the cauliflower
2 cups cauliflower rice
2 tablespoons olive oil
1 tablespoon soy sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon 21 seasoning salute
Chili pepper flakes to taste
* Heat a pan with oil. Add the cauliflower, garlic powder, onion powder, and 21 seasoning salute, stir to combine. Add soy soy sauce, stir and cook for 2 minutes or until tender and resembles a fried rice.
For platting:
Lay the butter lettuce leaves on a plate and build your wraps. Layer them with either turkey meat, cauliflower, or noodles. Then add the veggies, sprinkle with green onions, garnish with cilantro and drizzle the peanut sauce.
*Important note:
Always taste and adjust to your likings. Save the leftovers for the next day.
