Lemon garlic shrimp fried rice
You know by now how I love fried rice, and I hope you do too. I carefully infused the oil and roasted the garlic. Garlic burns fast, so be very carful, keep an eye on it. When you see it turns light brown, remove from the heat right away. I’ve strained the garlic, then I used the oil to sauté the rest of the ingredients.

Ingredients:
3 cups cooked rice
8 oz. shrimps, peeled and deveined
3 eggs
1 cup frozen peas
1 carrot, finely diced
1 yellow onion, chopped
4 garlic cloves, minced, divided
1 large red chili pepper, sliced (mild)
2 tablespoons oil
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon sesame oil
1/4 cup soy sauce
salt and pepper
Instructions:
1. Heat a pan with oil. Add 2 minced garlic, roast for 30 seconds or until they turned light brown. Remove from the heat, strain the oil and set the garlic aside (be careful the oil is hot). Marinate the shrimps in lemon juice, lemon zest, salt and pepper.
2. While marinating the shrimps. Heat a clean pan with oil. Add the eggs, cook until firm. Remove from the heat, cut it into chunks, set aside. Heat the same pan with the garlic infused oil, cook the shrimps, set aside.
3. In the same pan sauté the rest of the garlic, onion, carrot, green peas, chili pepper, season with salt, stir to combine. Add the rice, soy sauce, sesame oil, eggs, and shrimps, stir to combine. Sprinkle with toasted garlic. Serve immediately.
