Filipino Glass Noodles

Filipino Glass Noodles are one of my favorite Filipino dishes. My grandma used to cook different kinds of noodles but I always request to have glass noodles. It soaks up the flavor so well, the sauce is sweet and tangy with thin slices of veggies. For the protein, I used rotisserie chicken and shrimp, and they go perfectly with the noodles.

what are the ingredients?

  • 6 oz. dried glass noodles
  • Water
  • Carrot
  • Bell pepper
  • Celery
  • Onion
  • Garlic
  • Green onions
  • Sesame oil
  • Option: sesame seeds

FOR THE SAUCE:

  • Soy sauce
  • Oyster sauce
  • Rice vinegar
  • Brown sugar

how to cook the glass noodles:

  1. Soak the glass noodles. In a bowl, add water and soak the noodles for 15 minutes or until soft. Use a kitchen sear and cut the noodles to shorten them. 
  2. Prep and cut up the veggies. While the noodles are soaking, chop the onion, mince the garlic, and slice bell pepper, carrot, and celery. 
  3. Shred the rotisserie chicken. You can also cook 2 skinless boneless chicken breasts and shred them. 
  4. Make the sauce. In a measuring cup or small bowl, combine soy sauce, oyster sauce, rice vinegar, and brown sugar. Mix until the sugar is dissolved. Set it aside. 
  5. Stir-fry and cook the veggies. Heat a wok or wide pan with oil. Add the onion, saute until tender, then add the garlic, and continue sauteing until fragrant. Stir in the rest of the veggies, and cook until slightly tender but still crunchy. 
  6. Add the chicken and shrimp. Constantly stir, until the chicken is well heated. Then add the shrimp and cook until pink or opaque. 
  7. Finish cooking. It’s time to add the noodles and the sauce, constantly stir until the noodles are coated well with the sauce. Garnish with green onions and drizzle sesame oil.

can I use ground meat for the protein?

Yes, cook the ground meat first, then set it aside. Saute the veggies, add the cooked ground meat and noodles, and lastly add the sauce. Drizzle with sesame oil for added flavor. Check out my recipe for Korean Jap Che Noodles. 

can i make it vegetarian?

Yes, you can use firm tofu for protein. Or just add the veggies and sauce. If you’re not a fan of oyster sauce, eliminate it, and make the slurry (cornstarch dissolved in water). Add it to the sauce. Adding shiitake mushrooms also adds an amazing flavor to this dish. You can also use some greens, like spinach, bok choy, and cabbage. Here are the noodles I used – Bean Vermicelli Noodles

Glass noodles are also called cellophane noodles. It's soft noodles with flavorful sauce and thin slices of veggies. I used rotisserie chicken and shrimps for protein.

Ingredients
  

FOR THE NOODLES

  • 6 oz. dried glass noodles
  • water, to soak the noodles

FOR THE SAUCE

  • 3 tablespoons soy sauce
  • 3 tablespoons oyster sauce
  • 3 teaspoons rice vinegar
  • 1 tablespoon light brown sugar

FOR SAUTEING

  • 3 tablespoons oil
  • 1 yellow onion, sliced
  • 4 garlic cloves, minced
  • 2 stalks celery, sliced
  • 1 medium carrot, peeled, sliced
  • 1 small bell pepper, deseed, sliced
  • 2 cups shredded rotisserie chicken
  • 1 cup raw shrimps, peeled, deveined
  • 1 stalk green onion for garnish, sliced
  • 1 teaspoon sesame oil

Instructions
 

  • In a bowl, add the water, then add the noodles, soak for 15 minutes or until soft. Use the kitchen sears, cut the noodles into shorter strands. Set it aside.
  • Make the sauce. In a bowl or measuring cup, add soy sauce, oyster sauce, rice vinegar, and brown sugar. Use a whisk, mix until the sugar is dissolved.
  • Heat a wok or wide pan with oil, over medium heat. Add the onion, cook for a minute or until tender. Add the garlic, saute for a minute or until fragrant.
  • Add all the veggies, except green onions. Saute until tender.
  • Add the chicken, continue stirring until well heated. Add the shrimps, cook until they turned pink.
  • Add the noodles and the sauce. Keep stirring until well combined, and the noodles had soaked up the sauce. Drizzle sesame oil and garnish with green onions. Serve warm.
