Easy Paella
This is my version of Paella.
Paella is a Spanish seafood and rice dish. I used long grain rice but traditionally you use short or medium grain. I cooked my shrimps and chicken ahead of time, seasoned them with salt and pepper, and pan-fry them. For the mussels, I bought the cooked ones and just re-heat them.

ingredients:
4 oz. shrimps, deveined, tail on
4 oz. chicken breast, thinly sliced
4 oz. fully cooked mussels
2 oz. bacon or smokey sausage or pancetta, diced
1 cup rice
2 cups chicken broth
2 teaspoons smoked paprika
1/2 teaspoons turmeric
3 tablespoons oil ( I used annatto oil)
3 Roma tomatoes, deseed, diced
3 garlic cloves, minced
1 yellow onion, chopped
juice of one lemon
zest of one lemon
pinch of saffron
parsley for garnish
salt and pepper to taste
Instructions:
1. Heat a wide pan with oil. Cook the chicken and the shrimps. Heat up the mussels. Set aside.
2. In the same pan, add garlic and onion, sauté for a minute or until the onion is tender or translucent.
3. Add the pancetta, season with salt and pepper, stir to combine and add the turmeric and smoked paprika. Stir, add the tomatoes, constantly stirring until the tomatoes are tender.
4. Add the rice, toast for a minute, add the fresh lemon juice, stir, add the chicken broth and saffron. Stir, let boil, cover, lower the heat and simmer until all liquid is absorbed and the rice is cooked.
5. Add the lemon zest and fluff the rice. Add the cooked chicken, shrimps, and mussels. Garnish with parsley and lemon wedges.
