Chicken Lo Mein

Another quick and easy recipe! The ingredients I used are very accessible, you’ll have dinner in no time.

Ingredients:

1 lb. chicken breast, thinly sliced

8 oz. cooked egg noodles or half the package

3 tablespoons oil

1 teaspoon sesame oil

for the veggies

1 cup shredded green cabbage

1 cup shredded red cabbage

1 carrots, thinly sliced

1 teaspoon grated ginger

3 garlic cloves, minced

1 yellow onion, chopped

1 mild red chili pepper, sliced

2 stalks green onions, sliced

For the sauce:

1/4 cup soy sauce

1 tablespoon rice vinegar

1 tablespoon honey

3 teaspoons cornstarch

instructions:

1. Heat a pan with oil, cook the chicken for 5 minutes or until browned. Push the cooked chicken on one side of the pan, add garlic, ginger, and onion, saute for a minute or until tender, stir to mix well.

2. Add the veggies, except green onions, saute for 2 minutes, constantly stirring until the veggies are tender. Add the noodles, stir to combine. Then mix the sauce before adding to the pan, pour the sauce over the noodle mixture. Constantly stirring until well combined.

3. Drizzle sesame oil and sprinkle green onions. Serve warm.
