Chicken Cacciatore

Most of these ingredients are probably already in your pantry. This dish is full of flavors and you can pair it with anything you have. You can serve it with potatoes, rice, or just have it by itself.

Ingredients

1 1/2 lb. chicken breast, sliced thinly or you can also use dark meat

1 cup chicken broth

1/4 cup sherry wine vinegar

1 bell pepper, cubed

2 medium sized carrots, cubed

6 medium sized baby Bella mushrooms, cleaned and sliced

1 onion, chopped

3 cloves garlic, minced

1/4 cup soy sauce

2 tablespoons honey

2 tablespoons tomato paste

1 teaspoon dried basil

1 teaspoon dried thyme

1 teaspoon turmeric

4 tablespoons olive oil, divided

1 sprig fresh rosemary

1/4 teaspoon red chili pepper flakes, or black pepper

salt to taste

Instructions

-1. Heat a pan with 2 tablespoons oil, add the chicken and cook until slightly brown. Remove from the heat and set aside.

-2. In the same pan add the remaining oil. Sauté garlic and onion, add the rest of the vegetables, stir to combine.

-3. Add dried basil, dried thyme, turmeric, salt, and pepper, stir to combine. Add the tomato paste, sherry wine vinegar, soy sauce, honey, diced tomatoes, stir to mix well.

-4. Add chicken broth, cooked chicken, fresh rosemary, stir, cover, simmer for 5-10
