Chicken and Potato Salad
Creamy salad with chicken and potatoes. Pretty simple yet full of flavors. This is the perfect lunch to bring to work or a nice dish to bring for your potluck. The sundried tomatoes added a balanced flavor of sweet and savory combined with Dijon mustard, sweet relish, and shredded cheese. And finished it with a nice topping of raisins.

what are the ingredients?
- YELLO OR YUKON POTATOES – use two medium size potatoes, peeled and cut them into bite-sized pieces.
- ROTISSERIE CHICKEN – use 1 1/2 cups cooked and shredded chicken.
- MAYONNAISE – it makes the salad creamy
- DIJON MUSTARD – it adds a nice tangy flavor
- SEASONINGS – garlic powder, onion powder, and salt
- HOT SAUCE – adds heat
- SWEET RELISH – adds a balance of sweetness and savory flavor
- CHEDDAR CHEESE – always taste great on any salad
- SUN-DRIED TOMATOES – give your dish a big boost of flavor
- PARSLEY FLAKES – you can use fresh parsley
- RAISINS – nice sweet topping for your salad

Chicken and Potato Salad
Equipment
- Stockpot
- Mixing bowl
- Spatula
Ingredients
- 2 medium sized yellow potatoes, peeled, cubed, boiled
- 1 1/2 cooked shredded chicken or rotisserie chicken
- 1 cup mayonnaise
- 1 tablespoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon hot sauce
- 1/4 cup sweet relish
- 1 cup shredded cheddar cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1 teaspoon parsley flakes
- 3/4 cup raisins
Instructions
- Fill the stockpot with enough water to submerge the potatoes. Cook until fork-tender. Drain and transfer to a mixing bowl.
- In the same bowl, add the chicken, mayo, Dijon mustard, garlic powder, onion powder, salt, hot sauce, sweet relish, cheddar cheese, sun-dried tomatoes, parsley flakes, and raisins. Mix and toss everything until well combined.
- Serve with a side salad or garlic bread
