Chicken Adobo with Pineapple

Chicken Adobo is a popular dish in the Philippines. Marinated chicken thighs or drumsticks in garlicky and vinegary flavors. Combined with caramelized onion and pineapple.

why budget-friendly?

I went early at the grocery store while the butcher was stocking the cooler with all types of meat including chicken drumsticks that were incredibly inexpensive. These drumsticks were much bigger size than I want for my adobo. I cut them in smaller pieces, and separte the bottom part of the drumsticks. Then I made the chicken broth out of those bottom parts. I bougt two packages and made the other package for my  One-Pot Chicken and Rice.  They’re a great deal and I saved money. 

The pineapple were on sale too. They’re $2 a piece. Very easy to peel and cut into wedges. Pineapple have such a nice fresh flavor and taste so good when combined with something savory.

what are the ingredients?

  • CHICKEN THIGHS OR DRUMSTICKS – bone-in chicken thighs or drumsticks has a lot of flavors
  • PINEAPPLE – caramelized pineapple is a great addition for this dish
  • ONION – caramelized onion give more depth to the flavor
  • MINCED GARLIC – aside from garlic powder, I also used minced fresh garlic
  • DRIED BAY LEAVES – bay leaves are great for stewing, since adobo is technically a stewed meat. 
  • MARINADE – soy sauce, garlic powder, oyster sauce, honey, brown sugar, apple cider vinegar, and tomato paste

Chicken Adobo with Pineapple

Equipment

  • Cast iron skillet or nonstick skillet
  • Tongs
  • cutting board

Ingredients
  

  • 1 pound bone-in chicken thighs or drumsticks, cut into pieces
  • 1 teaspoon garlic powder
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tomato paste
  • 2 cups pineapple slices
  • 3 tablespoons oil
  • 1 yellow onion, sliced
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 4 dried bay leaves
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 2 stalks green onions, sliced

Instructions
 

  • In a bowl, combine the chicken, garlic powder, soy sauce, oyster sauce, honey, brown sugar, apple cider vinegar, and tomato paste. Toss everything to coat well. Marinate the chicken for at least an hour or overnight.
  • Meantime, heat the skillet with oil. Add the pineapple slices and brown for a minute on each side. Remove from the pan and set them aside.
  • Use the same pan, add the marinated chicken, sear for 1-2 minutes on each side or until golden brown. Remove from the pan and set them aside.
  • Add the onion into the same pan, cook until caramelized. Add the garlic, saute until fragrant. Add the chicken back into the pan, and add the remaining marinade also. Add the chicken broth and bay leaves. Cover, lower the heat, simmer for 2 minutes. Meantime, combine the cornstarch and water, stir until cornstarch dissolved (this is the slurry).
  • Add the slurry, stir, cook until the sauce thickened, about a minute.
