Peach Cobbler Muffins

These are smaller muffins that are ideal for snacking or for a quick breakfast. I added applesauce which makes them very moist.

Ingredients

2 ripe peaches, divided, peeled and cubed

4 oz. applesauce

1 cup oats

3 bananas

3 eggs

2 teaspoons cinnamon

1 teaspoon nutmeg

1 teaspoon baking powder

2 tablespoons coconut palm sugar

1/3 cup pure maple syrup

1/4 cup chopped pecans

1 teaspoon vanilla extract

pinch of salt

Instructions

1. Pre-heat the oven to 350ºF. Line the muffin pan with paper cups. In a food processor combine, peaches (reserve some for toppings), applesauce, maple syrup, eggs, bananas, oats, baking powder, cinnamon, nutmeg, and 1 tablespoon coconut palm sugar. Blend until smooth.

2. Transfer the batter into a bowl, add the vanilla, the rest of the peaches, and fold until combined. Use an ice cream scooper, scoop the batter into a prepared muffin pan, top with pecans and the remaining peaches. Sprinkle with the remaining coconut palm sugar. Bake for 20 minutes or until the toothpick inserted comes out clean.
