Lemon Blueberry Cheesecake
Perfect dessert for special occasion
Ingredients:
2 (8) oz. cream cheese
2 eggs
3/4 cup sugar
1 cup blueberries
juice of one lemon
zest of one lemon
vanilla
For the crust:
1 1/2 cups graham cracker crumbs
2 tablespoons butter, melted
-Combine all ingredients, line and grease a 6″ springform pan press the graham cracker crumb into the pan. Bake for 10-15 minutes.
Instructions:
-Heat the oven to 350 degrees.
-Cream the cream cheese and sugar, add the eggs, mix until well combined.
-Add the lemon juice, lemon zest, and vanilla, mix until smooth.
-Fold the blueberry until well combined.
-Scoop the batter into the prepared springform pan.
-Bake for 40-50 minutes or until it’s firm and not jiggly. Do not over baked, and top with berries.
