Homemade Loaded Nachos

If you’re thinking about what to make for Super Bowl Sunday, I have a good one for you. This recipe is so simple but very flavorful. Loaded nachos are one of the most popular dishes on the happy hour menu. Of course, homemade always wins the crowd.

Let’s get everything we need first:

You can use whatever cheese you like. I used the Mexican blend, it’s so convenient to have everything you need in one bag. One pound lean ground beef, four diced tomatoes, one onion, three jalapeño peppers, crispy bacon, green onions, cilantro, lettuce, lime, and homemade taco seasoning.

Let’s start cooking!

Heat the pan with oil. Saute the onion until tender. Let the onion release the flavor.
Add the ground beef and cook for 5 minutes or until browned.
Remove excess liquid.
Add the seasoning: smoked paprika, dried oregano, garlic powder, chili powder, cumin, salt, and pepper
Stir the meat until everything’s well combined.
Add the jalapeño pepper. For mild flavor, deseed the peppers.
Add the diced tomatoes.
Line the bottom of the 9 inch casserole dish with corn chips. Top with beef mixture.
Add the cheese, bacon, green onions, and colantro.
Add another layer of corn chips
Repeat the process, top with more bacon, green onion, cilantro, and cheese.
Place in a 400ºF oven for 3-5 minutes or until the cheeses melted.
Top with mashed avocado and sour cream

Ingredients
  

  • 1 poun lean ground beef
  • 8 oz. Mexican style four cheese
  • 3 tablespoons olive oil
  • 4 Roma tomatoes, deseed, diced
  • 1 yellow onion chopped
  • 3 jalapeno peppers, deseed, diced
  • 3 green onions, sliced
  • 1 cup bacon, cooked, diced
  • 1 cup cilantro, chopped
  • 1 cup lettuce, shredded
  • Juice of one lime
  • corn chips

FOR THE HOMEMADE TACO SEASONING

  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon Himalayan salt, or regular salt

Instructions
 

  • Heat a skillet with oil. Add the onion, saute for a minute or until tender.
  • Add the ground beef, cook for 5-8 minutes or until browned. To keep the beef nicely browned, drain the excess water. Add the homemade taco seasoning, stir until well combined.
  • Add jalapeno pepper, diced tomatoes, and squeeze lime juice, keep stirring until well combined. Remove from the pan and set aside.
  • Preheat the oven to 400ºF. Assemble the nachos. Line corn chips in a 9-inch casserole dish. Top with the meat mixture, cheese, green onion, bacon, and cilantro.
  • Repeat the process. Layer another corn chips, add the toppings.
  • Bake for 5-8 minutes or until the cheese melts. Sprinkle cilantro, shredded lettuce, and green onions, serve warm. Option: top with mashed avocado and sour cream

Notes

If you don’t have time to cook the bacon, use bacon bits.
