3 Day Plant Based Meals
It’s that time again, get your grill ready for some great veggies! Grilled portobello mushrooms are an instant hit to my taste bud. I love its meaty texture and earthy flavor. In this 3 day meals, I included wild rice. I love the nutty sticky taste of wild rice. Wild rice is high in fiber and easy in our digestion. It contains a good source of essential minerals such as phosphorus, zinc, and folate, which give us energy. It has vitamin A, C, and E which are essential for overall health and immunity.
I also made the Mango Salsa, so simple and clean. The sweet taste of mango compliments everything I had in this salsa recipe. I also made a kale salad, I just season it with apple cider vinegar, fresh garlic, salt, and pepper, that’s it – quick and simple green recipe.
Cook the Wild Rice according to package.

Recipe for the kale
Ingredients
- 1 bunch kale, removed from the ribs and cut into small pieces
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1 tablespoon apple cider vinegar
Instructions
- In a bowl, combine all ingredients. Massage the kale until wilted, season with salt and pepper.
Recipe for the Mango Salsa
Ingredients
- 1 ripe mango, cubed
- 1 small red onion chopped
- 1 jalapeno pepper, remove the seeds for milder flavor, chopped
- 1 cup cilantro, chopped
- 7 roma tomatoes, remove the seeds, diced
- Juice of one lime
- sea salt and black pepper to taste
Instructions
- In a bowl, combine all ingredients, stir to mix well.
Recipe for Grilled Portobello Mushrooms
Ingredients
- 3 large portobello mushrooms clean with damp cloth
- 1 tablespoon olive oil
- salt and pepper to taste
Instructions
- Season the mushrooms with salt and pepper, drizzle with olive oil. Grill each sides for 3-4 minutes or until tender. Remove from the grill and cut lengthwise.
