Spicy Chipotle Chicken Tacos

Spicy smokey flavor chicken tacos.

FOR THE CHICKEN TACOS
- 1 pound or one whole rotisserie chicken, remove the skin, and deboned
- 1 yellow onion, chopped
- 4 garlic cloves, minced
- 1 chipotle pepper, diced
- Homemade taco seasoning
- 8 flour or corn tortilla
FOR THE HOMEMADE TACO SEASONING
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- 1 teaspoon salt
Heat the skillet with oil. Add the onion, and saute for a minute or until tender. Add the garlic, and continue sauteing until fragrant.
Add the chicken, chipotle pepper, and taco seasoning, and stir to combine. Cook until well heated.
Assemble the tacos by filling each tortilla with chicken and toppings of your choice.
