Homemade Sazon Chicken Stew

Homemade Sazon Chicken Stew is a hearty and flavorful dish that is perfect for any occasion.

FOR THE HOMEMADE SAZON
- 2 teaspoons garlic powder
- 2 teaspoons smoked paprika
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1/2 teaspoon oregano
- 1 1/2 teaspoon sea salt
- 1/2 teaspoon red chili pepper flakes
FOR THE STEW
- 2 1/2 pounds chicken drumsticks
- 1 teaspoon sea salt
- 1/2 teaspoon ground pepper
- 3 tablespoons oil
- 1 yellow onion, chopped
- 2 Roma tomatoes, diced
- 1 bell pepper, deseed and sliced
- 8 oz. tomato sauce
- 2 medium size yellow potatoes, peeled and cut into an-inch cubes
- 2 cups chicken broth
Combine all the homemade Sazon spices.
Heat the stockpot with oil, add the chicken, and brown on all sides for about 2-3 minutes. Set them aside. See NOTE #1
In the same pot, add the onion and saute until tender or translucent. Add the tomatoes, bell pepper, and Sazon seasoning, and stir to combine. Add the tomato sauce and the chicken back to the pan, and simmer for 5 minutes.
Add the potatoes and chicken broth, cover, lower the heat, and simmer for another 20-30 minutes or until the potatoes are tender and the chicken is cooked through. See NOTE #2
NOTE #1 - Sear the chicken drumsticks on all sides. Doesn't have to be cooked all the way through because you'll simmer the stew later.
NOTE #2 - The Sazon seasoning is also good for making fish stew, pork stew, vegetables, and even for making Spanish rice.
