Homemade Breakfast Burritos

Combination of juicy chicken, sweet bell pepper, and aromatic onion, all enhanced by the perfect spice blend, makes each bit an explosion of taste.

Ingredients
  

SPICES

  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • 1/2 teaspoon red chili pepper flakes
  • 1 teaspoon fine sea salt

MAIN INGREDIENTS

  • 1 bell pepper, diced and deseeded
  • 1 yellow onion, chopped
  • 4 large eggs, beaten
  • 3 cups shredded rotisserie chicken, or cooked shredded chicken breast
  • 1 cup cheese, cheddar or any of your favorite
  • 10-12 medium flour tortillas
  • oil for sauteeing and frying

Instructions
 

  • COMBINE ALL SPICES: In a small bowl, combine chili powder, garlic powder, cumin, onion powder, smoked paprika, oregano, red chili pepper flakes, and salt. Set it aside.
  • CHOPPED AND SCRAMBLED: Prep the veggies by chopping the onion and dicing the bell pepper. Then beat the eggs, add them to a hot pan, and scramble. Set them aside.
  • SAUTE: In another pan, add the oil, and heat over medium-high. Add the onion and bell pepper, and saute until tender. Add the spices, stir to combine, and cook until aromatic. Stir in the cooked chicken and cook until well heated. Set aside to cool.
  • ASSEMBLE AND WRAP: Fill the tortilla with the chicken mixture, and add the eggs and cheese. Roll halfway then fold the two sides in, and roll until you reach the end. Continue the process with the rest of the chicken filling and the remaining tortillas.
  • FRY: Heat a skillet or wide pan with oil over medium-high heat. Cook the burritos in batches. Make sure to place them seam-side down to avoid opening. Flip all sides for even browning. Serve warm

Notes

  • MEAT OPTION: You can use ground beef or ground pork. 
  • VEGETARIAN OPTION: You can add black beans or any kind of beans, tofu, more veggies like spinach, broccoli, or even cauliflower.
  • WITHOUT TORTILLA: You can make a burrito bowl by adding rice and beans.
