Healthy Carrot Banana Oat Bread

Equipment

  • 9 x 9 baking pan or baking dish, I used the Pyrex glass baking pan
  • Large mixing bowl for wet ingredients
  • Food processor for pulsing the oats until they turn into a flour texture
  • Measuring spoons
  • Measuring cups Use a microwaveable glass cup for melting the butter
  • Knife and cutting board for chopping
  • Parchment paper for lining the pan

Ingredients
  

DRY INGREDIENTS:

  • 1 cup gluten-free rolled oats, I buy my oats from Trader Joe's
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 scoop vanilla protein powder, You can eliminate this ingredient if you desire.
  • 1 teaspoon cinnamon, optional, but a great flavor enhancer
  • 1/2 teaspoon nutmeg: optional

WET INGREDIENTS:

  • 2 large eggs
  • 1 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons melted butter, Place it in a microwaveable glass and heat for 30 seconds to 40 seconds. Let cool before adding to the mixing bowl.

OTHER INGREDIENTS:

  • 1 medium size carrot, Shredded - measured about 1 cup
  • 1 medium size apple, Pick your favorite apple, shred, and measure about 1 cup
  • 2 ripened bananas mashed
  • 4 dates, chopped
  • 1 cup pecans, chopped and more for topping
  • oil for greasing the pan

Instructions
 

  • Preheat the oven to 350ºF. Grease the 9x9 baking pan and line it with parchment paper. Set aside.
  • Place the oats in a food processor, and pulse until they turn into a flour or resemble coarse sand. Add baking powder, salt, protein powder, and cinnamon. Pulse again until all ingredients are combined. See NOTE #1
  • In a large bowl, combine eggs, milk, vanilla, and butter. Use a wire whisk and mix until combined.
  • Switch to a rubber spatula and add the oat flour mixture gradually. Keep mixing until smooth. Scrap the sides of the bowl.
  • Fold in the shredded carrot, shredded apple, mashed bananas, chopped dates, and one cup chopped pecans. Make sure all ingredients are combined well, scraping the sides of the bowl.
  • Pour the mixture into a prepared pan. Smooth the top with a spatula, and sprinkle some chopped pecans.
  • Place the baking pan in the middle rack of your oven. Bake for 45-50 minutes or when the toothpick inserted comes out clean.

Notes

NOTE #1 - I buy my gluten-free oats from Trader Joe's. If you cannot find gluten-free oats, you can use regular rolled oats. Don't use instant oats.
