Grilled Lemon Garlic Chicken Skewers

Wooden Skewers
- 1 pound boneless, skinless chicken breast
- 1/4 cup olive oil
- 3 garlic cloves, minced
- 1/2 teaspoon dried thyme
- 2 tablespoons lemon juice, freshly squeezed
- 1 tablespoon honey
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
Soak the wooden skewers in water for 30 minutes to prevent burning.
Cut the chicken breast into 1-inch cubes and place them in a large bowl.
In a small bowl, whisk together olive oil, minced garlic, dried thyme, lemon juice, honey, salt, and black pepper.
Pour the mixture over the chicken and toss to coat.
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes or up to 4 hours.
Preheat the grill to medium-high heat.
Thread the chicken onto skewers, leaving a little between each piece.
Grill skewers for 8-10 minutes, turning occasionally, until chicken is cooked through and no longer pine on the inside.
Serve hot with additional lemon wedges and chopped parsley, if desired.
