Fig Salad with Balsamic Glaze

Juicy figs, crispy apple, Gorgonzola cheese, and walnuts, on a bed of fresh bright colored greens. Drizzle with balsamic glaze over the salad.

Ingredients
  

  • 5-7 black figs, washed, trimmed, and sliced
  • 1 apple, cored and sliced
  • 1 tablespoon freshly squeezed lemon juice
  • 1/4 cup balsamic vinegar
  • 1 tablespoon brown sugar
  • 1/2 teaspoon salt
  • 2 cups mixed greens
  • 1/2 cup walnuts
  • 1/2 cup Gorgonzola cheese

Instructions
 

  • SLICE THE FRUITS:
    Use a sharp knife to make clean cuts. Wash, trim, and slice the figs into quarters. Cut the apple in half, remove the core, then thinly slice it. Squeeze lemon juice over the apple slices to prevent browning.
  • MAKE THE BALSAMIC GLAZE:
    Place the balsamic vinegar, brown sugar, and salt in a saucepan and heat over medium-high heat. Let it simmer for 5-7 minutes or until the sugar dissolves and the mixture bubbles. Remove from the heat and let sit for 5 minutes or until the glaze thickens. See NOTES.
  • ASSEMBLE THE SALAD:
    Add the mixed greens, figs, slices of apple, walnuts, and Gorgonzola cheese, then drizzle the balsamic glaze over the salad. Serve immediately.

Notes

NOTES: For the dressing, you can also make balsamic vinaigrette or a honey mustard dressing are great options to drizzle over the salad. You can also add slices of red onion to bring a burst of tangy flavor and added crunchy texture that compliments the sweetness of the figs and the richness of the balsamic glaze.
