Easy Mini Quiche Recipe

Ingredients
  

FOR THE CRUST

  • 1 package (14 oz.) refrigerated pie crust, softened according to package instructions

FILLING

  • 6 large eggs
  • 1 cup milk, (whole or 2%)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled feta cheese
  • 1/2 cup cooked and crumbled bacon or sausage, (optional)
  • 1/2 cup chopped spinach
  • 1/4 cup diced bell peppers
  • 2 tablespoons chopped green onions

Instructions
 

PREPARATION:

  • Preheat the Oven: Preheat your oven to 375°F (190°C).
    Prepare the Crust: Roll out the softened pie crusts on a lightly floured surface. Using a round cookie cutter or a glass, cut circles out of the dough to fit the cups of a mini muffin tin. Gently press each dough circle into the cups of the mini muffin tin to form little crusts.

FOR THE FILLING:

  • Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
    Assemble the Quiches: Evenly distribute the cheddar cheese, feta cheese, bacon or sausage (if using), spinach, bell peppers, and green onions into the crust-lined muffin cups. Carefully pour the egg mixture over the fillings, filling each cup to about 3/4 full.

BAKING:

  • Bake the Mini Quiches: Place the mini muffin tin in the preheated oven and bake for 20-25 minutes, or until the egg filling is set and the tops are lightly golden.

COOLING AND SERVING:

  • Cool and Serve: Remove the mini quiches from the oven and allow them to cool in the tin for about 5 minutes. Carefully remove the quiches from the tin and serve warm, or let them cool completely on a wire rack for later enjoyment.
