Crispy Fried Chicken

This recipe features a blend of spices which gives the chicken a mouth-watering flavor. We used a unique batter mixture of egg whites and milk to create a perfectly crispy coating on the outside. While the mixture of flour and cornstarch helps retain the moisture inside the chicken.

Ingredients
  

FOR THE CHICKEN

  • 2 pounds chicken drumsticks, washed, cleaned, and trimmed
  • 1/2 teaspoon black ground pepper
  • 1 teaspoon salt
  • 1 tablespoon hot sauce, use less for mild flavor

FOR THE SPICES

  • 2 teaspoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper

FOR THE FLOUR MIXTURE

  • 1 cup all-purpose flour
  • 1/4 cup cornstarch

FOR THE BATTER

  • 2 egg whites
  • 1 cup whole milk

FOR FRYING

  • neutral oil, for frying

Instructions
 

  • Combine spices, and season the chicken with salt, ground pepper, and hot sauce. Marinate for at least an hour or overnight.
  • Combine flour and cornstarch, then add the spices. Mix until well combined.
  • Whisk the egg whites and milk until combined.
  • Dip the chicken into the batter, then dredge into the flour mixture. Shake off excess flour. Place the chicken on a platter or baking pan. Set them aside.
  • Heat a frying pan with oil over medium-high heat. Add the chicken and fry until golden brown or until cooked through, and the internal temperature reaches 165ºF.

Crispy Fried Chicken drumsticks are a delicious and classic dish that many people love. To ensure that your chicken drumsticks turn out perfectly crispy and delicious, there are a few important notes to remember when frying them.
  • Make sure that your chicken drumsticks are completely dry before frying them. This can be achieved by patting them dry with a paper towel or leaving them uncovered in the refrigerator for a few hours before cooking.
  • It's important to use the right oil for frying. Peanut oil or vegetable oil are great options as they have a high smoke point and neutral flavor. You should also ensure that the oil is hot enough before adding the chicken, as this will help to create a crispy crust. A temperature of around 350-375°F is ideal.
  • Don't overcrowd the pan when frying the chicken. This can cause the temperature of the oil to drop, resulting in soggy chicken. Fry the chicken in batches, and once cooked, place it on a wire rack to cool slightly and allow any excess oil to drain off.
