Beef and Pepper Stir Fry

- 1 pound of a tender cut beef, cut into thin slices
- 1 yellow onion, chopped
- 1 bell pepper, deseed, sliced
- 4 tablespoons oil, divided
FOR THE MARINADE
- 1/4 cup cornstarch
- 2 tablespoons soy sauce
- 2 teaspoons sesame oil
- 1 teaspoon grated ginger
FOR THE SAUCE
- 1/4 cup light soy sauce
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 1 tablespoon apple cider vinegar
- 1 tablespoon brown sugar
- 1 tablespoon tomato paste
- 1 garlic clove, grated
In a bowl, combine beef and the marinade, toss to coat well. Set aside.
Heat a pan with two tablespoons oil, add the marinated beef, cook for 2 minutes on each side or until browned. Remove from the heat, place on a paper towel to drain excess oil. Set aside.
In the same pan, add the remaining oil. Add the onion, saute for 2 minutes, or until caramelized. Add the bell pepper, stir to combine, and cook until slightly tender.
Add the cooked beef and sauce, constantly stirring until the sauce thickened.
