Apple Bread Pudding

Ingredients
  

  • 3 cups of day-old bread, cubed (challa or brioche recommended for richness)
  • 1 1/2 cups of apples, peeled, cored, and diced
  • 1 1/2 cups of whole milk
  • 1/2 cup of heavy cream
  • 1/2 cup of granulated sugar
  • 1/4 cup of brown sugar
  • 2 large eggs
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup of raisins, optional
  • 1 tablespoon of unsalted butter, melted

GLAZE OPTIONAL

  • 1/2 cup of powdered sugar
  • 2 tablespoons of milk (or heavy cream for a richer glaze)
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of ground cinnamon, optional, for a spiced glaze

Instructions
 

  • PREHEAT THE OVEN: Preheat the oven to 350ºF (175ºC)
  • PREPARE THE BREAD AND APPLE:
    In a large mixing bowl, combine the cubed bread and diced apples. Add the raisins if desired, and mix well.
  • MAKE THE CUSTARD MIXTURE:
    In a medium bowl, whisk together the milk, heavy cream, granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until fully combined.
  • COMBINE AND SOAK:
    Pour the custard mixture over the bread and apple mixture. Gently toss to ensure all bread pieces are soaked in the custard. Let it sit for about 15 minutes to absorb the flavors.
  • ASSEMBLE:
    Pour the soaked bread mixture into a greased loaf pan. Drizzle the melted butter evenly over the top.
  • BAKE:
    Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and the custard is set.
  • COOL AND SERVE:
    Allow the pudding to cool in the pan for at least 10 minutes before slicing and serving. It pairs beautifully with a scoop of vanilla ice cream and a dollop of whipped cream.

GLAZE (OPTIONAL)

  • MIX INGREDIETNS:
    In a small mixing bowl, combine the powdered sugar, milk, and vanilla extract. If you are using cinnamon for a spiced glaze, add it to the mixture.
  • WHISK UNTIL SMOOTH:
    Whisk the ingredients together until the glaze is smooth and free of lumps. If it's too thick for your liking, add a little more milk, a teaspoon at a time, until you reach the desired consistency.
  • DRIZZLE OVER BREAD PUDDING:
    Once the apple bead pudding has cooled slightly, use a spoon or a small whisk to drizzle the glaze evenly over the top. Allow it to set for a few minutes before slicing and serving.
