Ingredients
  

  • 1 head cauliflower, cut into florets
  • 1 cup shredded lettuce leaves
  • 6 whole lettuce leaves, add more if needed trim the bottom
  • 4 eggs, beaten
  • 1/4 cup Sriracha
  • 1/2 cup almond meal
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • a handful chopped cilantro, for garnish
  • salt to taste

Instructions
 

  • Preheat the oven to 375 degrees. Line a baking sheet pan with foil or parchment paper. 
  • In a bowl, add eggs and Sriracha, mix to combine well. Add the cauliflower and almond meal, season with salt, stir to mix. 
  • Arrange the cauliflower on the baking sheet and drizzle with oil. Bake for 30-40 minutes or until tender. Cool, lay the lettuce leaves on a plate, fill with tomatoes, cilantro, and cauliflower. Drizzle the avocado cream on top.
