Ingredients
  

  • 1 pound chicken breast, cut into small pieces
  • 1 cup quinoa, uncooked
  • 2 cups chicken broth
  • 3 cloves garlic, minced
  • 1 yellow onion, chopped
  • 2 tablespoons olive oil
  • juice of one lemon
  • zest of one lemon
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • a handful of cilantro, chopped
  • black pepper to taste

Instructions
 

  • In a stock pan, add the quinoa and chicken broth. Place the pan on the stove over high heat, when it starts boiling, bring the heat to the lowest temperature, cover and let it simmer for 10 minutes or until the liquid is absorbed. Set the quinoa aside.  Heat a pan with oil, saute garlic and onion, add the marinated chicken, stir to mix, cook thoroughly. 
  • Add the quinoa, chili powder, smoked paprika, salt, and pepper. Stir to mix, add the lemon and lemon zest, stir until well heated. Garnish with cilantro.
