Ingredients
  

  • 2 medium ripe plantains, peeled, sliced
  • 2 tablespoons coconut oil
  • 1 tablespoon unsweetened coconut flakes
  • 1 teaspoon cinnamon
  • 2 teaspoons coconut palm sugar
  • a handful of berries, optional

Instructions
 

  • Heat a pan with oil. Add the plantains (do not crowd the pan), cook each side for a minute or until golden brown. 
  • Place the cooked plantains on a plate with paper towel to drain the excess oil. On a plate, the sugar and cinnamon. Dredge the plantains in the cinnamon sugar, sprinkle with coconut flakes. Serve with berries.
