Ingredients
  

  • 2 cups corn kernel
  • 2 Roma tomatoes, seeds removed and diced
  • 1 small red onion, chopped
  • Juice of one lime
  • a handful of cilantro, roughly chopped
  • salt and pepper to taste

Instructions
 

  • In a bowl combine all ingredients, stir, toss to coat. Serve with your blackened shrimps.
