Ingredients
  

  • 1 large carrot, peeled and cubed
  • 2 cups cauliflower, florets
  • 1 large zucchini, sliced
  • 1 red onion, sliced
  • 1 red bell pepper, remove seeds, cubed
  • 2 tablespoons olive oil
  • salt and pepper

Instructions
 

  • Heat the oven to 375 degrees, line a baking pan with parchment paper. Arrange the vegetables, drizzle with oil, season with salt and pepper. Toss to coat well. Bake for 15-20 minutes or until tender.
