Cook the noodles according to package instructions.
Heat a pan with oil, saute garlic and onion. Add bell pepper, green onions, jalapeno pepper, stir, cook until tender. Add the shrimps, cook until they turn opaque or starts curling.
Add the noodles, season with salt and black pepper, stir to combine. Add the cilantro, lime juice, and scrambled eggs, stir to mix well. Remove from the heat, sprinkle with roasted peanuts. Serve immediately.
