Ingredients
  

  • 1 package red Thai noodles, you can find them at Trader Joe's
  • 1 pound Argentinian wild caught shrimps (or regular shrimps) peeled and deveined
  • 1 cup cilantro, chopped
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 jalapeno pepper remove seeds for mild taste
  • 1 tablespoon fresh lime juice
  • 1 tablespoon roasted peanuts
  • 2 tablespoons olive oil
  • 2 stalks green onions chopped
  • 3 eggs, scrambled
  • 4 garlic cloves minced
  • salt and pepper to taste

Instructions
 

  • Cook the noodles according to package instructions. 
  • Heat a pan with oil, saute garlic and onion. Add bell pepper, green onions, jalapeno pepper, stir, cook until tender. Add the shrimps, cook until they turn opaque or starts curling. 
  • Add the noodles, season with salt and black pepper, stir to combine. Add the cilantro, lime juice, and scrambled eggs, stir to mix well. Remove from the heat, sprinkle with roasted peanuts. Serve immediately.
