Ingredients
  

  • 1 cup broccoli florets
  • 1 cup Brussels sprouts, halved
  • 1 bunch asparagus, trimmed
  • 1 Roma tomatoes, sliced
  • 1 small red onion, sliced
  • 2 garlic cloves, minced
  • Juice of half lemon
  • 2 tablespoons olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat the oven to 375 degrees. Line a baking sheet pan with parchment paper or foil. Arrange the vegetables, sprinkle minced garlic, season with salt and pepper. Squeeze lemon and drizzle with oil. Bake for 20 minutes or until tender.
