Ingredients
  

  • 2 cup cooked lentil
  • 1 Roma tomato, small diced
  • 1 yellow onion, chopped
  • 3 garlic cloves, minced
  • 2 cups vegetable broth
  • 1 cup spinach
  • a handful of cilantro
  • 2 tablespoons olive oil
  • 2 tablespoons tamari (non-GMO soy sauce)
  • 1 teaspoon cumin
  • 1 teaspoon 21 seasoning salute
  • 1/2 teaspoon turmeric
  • salt and pepper to taste

Instructions
 

  • Heat a stock pan with oil, saute garlic and onion. Add the tomato, lentils, and seasonings: 21 seasoning salute, cumin, turmeric, tamari, salt, and pepper, stir to mix well.
  • Add the vegetable broth stir, lower the heat, cover, and simmer for 5 minutes. Serve with roasted sweet potato
