pound
chicken breast
thinly sliced
1
any color
bell pepper
sliced
1
medium
red onion
sliced
1
teaspoon
smoked paprika
1
teaspoon
chili powder

tablespoon
olive oil
Juice
of
one lime
salt and black pepper
Instructions
Heat the oven to 375 degrees. Line a baking sheet pan with parchment paper.
Line the chicken and vegetables on the pan. Season them well with smoked paprika, chili powder, lime juice, salt, and pepper. Drizzle olive oil.
Bake for 15-20 minutes or until the chicken is cooked through. Garnish with your favorite fresh herbs.
Serve with steamed brown rice or quinoa. You'll have dinner for 3 days with no fuss!
Note: You can use any vegetables you like. You may also use beef and turkey breast if you like.
