Ingredients
  

  • 1 pound chicken breast thinly sliced
  • 1 any color bell pepper sliced
  • 1 medium red onion sliced
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 2 tablespoon olive oil
  • Juice of one lime
  • salt and black pepper

Instructions
 

  • Heat the oven to 375 degrees. Line a baking sheet pan with parchment paper.
  • Line the chicken and vegetables on the pan. Season them well with smoked paprika, chili powder, lime juice, salt, and pepper. Drizzle olive oil. 
  • Bake for 15-20 minutes or until the chicken is cooked through. Garnish with your favorite fresh herbs. 
  • Serve with steamed brown rice or quinoa. You'll have dinner for 3 days with no fuss! 
  • Note:  You can use any vegetables you like. You may also use beef and turkey breast if you like.
