Easy Veggie Pizza

Ingredients
  

  • 1 pizza dough, either homemade or store-bought
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded cheddar cheese, mild or sharp
  • 1/2 cup store-bought pizza sauce
  • 2 tablespoons olive oil
  • 1/2 bell pepper, sliced
  • 1 small red onion
  • 2 cups broccoli florets
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

  • You can get my Homemade Pizza Dough Recipe. Or store-bought pizza dough for an easier option.
  • SAUTE THE VEGGIES: Consider pre-cooking the vegetables to remove excess moisture before adding them to the pizza. Start by heating the oil in a nonstick skillet over medium-high heat. Add sliced bell pepper, red onion, and broccoli. Season with salt, ground pepper, and Italian seasoning. Cook the veggies until crisp-tender. Set them aside to cool.
  • ROLL OUT THE DOUGH: If you make my pizza dough recipe, divide it in half and work the dough one piece at a time. Roll out each portion into a pizza crust of your desired thickness. Fold the edges, and gently lift and fold the outer edges of the dough towards the center, creating a border. You can pinch and crimp the edges to help them hold their shape while baking.
  • BAKE: Spread a layer of your favorite tomato sauce or pizza sauce on the crust. For toppings, spread the sauteed veggies and sprinkle some Parmesan cheese. Then, top with the cheese. Bake in a preheated oven at 400ºF for about 15-18 minutes or until the crust is golden brown.
