Cinnamon Banana Muffins

- 1 1/2 cups all-purpose flour
- 1 tablespoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3 bananas, mashed
- 2 large eggs
- 3/4 cup sugar
- 1/2 cup canola oil
FOR THE TOPPINGS
- 1/4 cup melted butter
- 1/4 cup brown sugar
- 2 teaspoons ground cinnamon
Preheat the oven to 350ºF. Line a muffin tin with paper cups.
Combine the dry ingredients. In a bowl, add the flour, cinnamon, baking powder, and salt. Use a whisk, and until well combined.
Mash the bananas. In a separate bowl, add sugar, eggs, and canola oil. Whisk until light in color and smooth.
Add the mashed bananas and mix until well incorporated.
Slowly add the dry ingredients, about a third at a time. Use a spatula and mix until well combined.
Use a cookie scoop. Scoop 1/4 cup of 3/4 full of batter in each cup. Bake for 20-25 minutes or until the toothpick inserted in the middle of the muffin comes out clean.
Cool on a cooling rack. Spread or brush the melted butter on top and sprinkle the cinnamon sugar.
