Kiddy Mango Mojito

Nice Summer virgin Mojito drink. A combination of refreshing lemon-lime soda, mango, and pressed mint leaves. Lots of ice stirred not shaken!

Equipment

  • Mortar and Pestle
  • Whisk
  • Drinking glass
  • Saucepan

Ingredients
  

  • 1/4 cup sugar
  • 1/4 cup water
  • 1 ripened mango, peeled, diced
  • 2 juices of limes, reserve some for garnish
  • 1 cup mint leaves
  • a pinch of salt
  • 1 1/2 cup Sprite
  • 2 cups ice cubes

Instructions
 

  • Place the saucepan on a stove, turn it on to medium heat. Add sugar and water, stir, simmer until the sugar dissolved. Set aside.
  • Slice the sides (cheeks) of the mango. Score the flesh with your knife. Use a spoon to scoop the flesh out of the skin (this is called the "hedgehog" method). Place them in a bowl and set them aside.
  • Cut the limes into slices. Place the mint leaves in the pestle, sprinkle salt. Squeeze the limes. Use a mortar to press the leaves. Crush them to release the juices from the mint and render the flavor (it'll smell very minty).
  • Place crushed leaves in a tall glass. Add syrup and Sprite, stir vigorously.
  • Assemble, divide the mixture into two small glasses. Add the diced mango and ice cubes. Strain the mojito mixture into the glasses, garnish with mint leaves and limes. If the mixture is too sweet for you, add water or more ice cubes.

Notes

  • Make sure to buy fresh mint leaves without bruises. 
  • Use more limes if needed. If you find it too sweet, add water or more ice cubes, then squeeze more lime juice. 
  • To make this drink for adults, add a splash of rum or maybe more than a splash if you wish!
